Arthritis is one of the most common health conditions in the United States, affecting approximately one in four adults.
Of course, genetics have to be taken into consideration, but changing to a plant-based diet can also help reduce arthritis pain.
According to the Physicians Committee for Responsible Medicine, a 2015 study found that people eating a whole-food, plant-based diet significantly decreased their osteoarthritis pain—in as little as two weeks.
Now you see more plant-based options and it seems like every fast-food place and restaurant has added something plant-based to their menu. Ask the restaurant staff about plant-based options.
Let’s look at some plant-based foods you can make at home:
Tasty Mexican Food
When you think of Mexican food, you may think of carnitas or taco meat, but for a plant-based twist, use refried beans, lentils, or jackfruit in place of meat. This combination is delicious for tacos, burritos, or nachos.
Load on some veggie toppings and you have a tasty plant-based meal.
Tofu
I was introduced to tofu during my college days. When I first looked at the consistency, I thought no way, no how, will I ever let this food pass my lips. What is tofu? Tofu — or bean curd — is made by pressing curdling soy milk into a solid block. Scrambled tofu for breakfast is my favorite way to eat it. It can also be fried crisp and added to a stir-fry.
Apple Pecan Arugula Salad
Arugula, crisp apples, and toasted pecans are not only nutritious, but you get that satisfying crunch with the pecans and apples. The arugula is peppery and dressed with a light lemon vinaigrette, you won’t have to worry about breaking the calorie bank.
I would like just a sprinkling of goat cheese to top it off, but you can add whatever you like.
This could be a side dish or used for a light supper.
Banana Bread with Maple Glaze
I have had a long-running affair with any kind of bread, but this banana bread makes a good breakfast or snack. Put this out for company and your house may become the popular hangout.
If you want to send it over the top nutritionally, use organic cinnamon, high-quality vanilla, real maple syrup, and organic bananas.
Walnuts add extra nutrition and a satisfying crunch.

Cherry Chocolate Smoothie
A smoothie is a popular drink with the in-crowd and you can customize it to your individual taste. Buy fresh cherries at your local farmer’s market or the grocery store. Cherries are a good source of vitamin C, potassium, fiber, and other nutrients.
Who doesn’t like chocolate? I’m willing to try just about any new recipe that satisfies my chocoholic taste buds.
Flaxseed, oats, chia seeds, and romaine lettuce combine to make this drink not only taste good but is good for you.
Pumpkin Spice Chia Pudding
We are having some colder weather, and this pudding warmed up would really hit the spot. Serve as a dessert, or if you are like me, eat it for breakfast.
Summary
Now that you know how nutritious and satisfying a plant-based meal can be, don’t be afraid to get in the kitchen and experiment. What an enjoyable way to eat healthy food!
